Several friends and relatives responded to my request for their favorite, easy recipes – meals their families liked on busy week nights.   I am in the process of cooking each recipe 2-3 times before adding it to the blog but a few were so simple that I’m posting them after only testing them once.  Tasha Syzdek sent this Mozzarella-Meatball Roll recipe and I served it at a snack supper with Easy Italian Pasta and Bean Soup (pasta e fagioli).  The teens ate it up.  Enjoy!
