Aloo Matar

Peas and potatoes in a spicy tomato sauce.   An easy to follow recipe for this Indian comfort food can be found on All Recipes: http://allrecipes.com/Recipe/aloo-matar/Detail.aspx.  Just remember, Indian cooking usually takes at least 30 minutes to prepare so don’t plan this dish for a hurried meal.

Ingredients for your shopping list:

  • 1/4 cup vegetable oil
  • 2 medium onions, finely chopped
  • 1 tablespoon ginger garlic paste
  • 1 bay leaf
  • 4 large potatoes, peeled and chopped
  • 1 cup frozen peas
  • 1/2 cup tomato sauce (one 8 oz. can)
  • 1 1/2 teaspoons garam masala
  • 1 1/2 teaspoons paprika
  • 1 teaspoon white sugar
  • 1 teaspoon salt
  • 2 tablespoons chopped cilantro leaves

Summary: fry the ginger garlic paste, bay leaf and diced onions in oil in a large non-stick skillet for 5 minutes.  Add potatoes and peas, cover, and reduce heat to low.  Simmer 15 minutes.  Remove bay leaf, add in everything else except cilantro.  Cook on medium for 10 minutes.  Add cilantro leaves and cook 2 more minutes.  Serve warm with this week’s Rice Dish: Pulao.
