Spanish Rice

Fiesta Brand Spanish Rice

This is the recipe on the bottle of Fiesta brand Spanish Rice seasoning and it’s just about perfect so I don’t change a thing!  Give yourself 25 minutes to prepare and cook this rice.  It cannot be hurried.

  • Fiesta brand Spanish Rice seasoning
  • 1 Tablespoon cooking oil
  • 1 cup uncooked rice (I prefer Adolphus brand because it’s grown by local Texas farmers and produced in Freeport)
  • 1 can tomatoes, 7-14 oz. (drain tomatoes, reserve liquid in a separate cup)
  • 1 Tablespoon Bolner’s Fiesta Brand® Spanish Rice Seasoning
  • up to 2 cups water

Drain the tomatoes and save the liquid or juice.  Chop the tomatoes if you didn’t buy the diced kind.  Pour the reserved liquid into a measuring cup.  Add enough water to make 2 cups of watery juice.

Heat the oil in a skillet that has a tight fitting lid. Add the rice and fry it until it starts to turn brown. Stir in tomatoes, watery juice and  Spanish Rice Seasoning and bring to a boil.  Cover with a tight fitting lid and SIMMER on low heat for 15-20 minutes until the water is absorbed. Do not overcook. Fluff and serve. Makes 6-8 servings.

Low heat means 2 if your scale is 1-9.  If your range heat is marked with words, use Simmer or Low.  If you try to hurry the rice along and cook it on medium, you will only burn the bottom layer of rice and all the rice will still be hard on the inside.
