Garlic Mini Potatoes

Mini potatoes are fun to eat and cook pretty quickly.  For this recipe, choose small yellow or white potatoes, or fingerling potatoes.

  • 1-1/2 pounds mini or petite potatoes
  • 2 teaspoons garlic, minced
  • 1 teaspoon salt
  • juice from 1 medium to large lemon
  • 1 Tablespoon Parmesan cheese (for this recipe, it’s okay to use the kind of Parmesan you sprinkle over pizza or spaghetti)
  • Optional: 1/4 cup butter or margarine, melted

Preheat the oven to 350°F.  Place the potatoes in a small baking dish (8×8, 9×9, or larger if you don’t have a small dish).  Combine all other ingredients except Parmesan cheese.  Stir to mix thoroughly and pour over potatoes.  Stir potatoes around in pan to coat, then sprinkle with Parmesan cheese.  Cover with foil and bake 30 minutes.  Remove the foil and bake for 10 more minutes.
