Bananas Foster

For a charity fund-raiser in one of my departments at Rice, I made and served Bananas Foster on the spot by using a portable burner. See the original recipe created at Brennan’s in the 1950’s: https://www.brennansneworleans.com/recipes/bananas-foster/

Family size, serves 4: 1 banana, sauce, and 1/2 cup ice cream per person

  • 4  medium bananas
  • 1/4  cup  butter
  • 1  cup  packed brown sugar
  • 1/4  cup crème de banane (banana liqueur)
  • 1/2  teaspoon  ground cinnamon
  • 1/4  cup  dark rum
  • 2  cups  vanilla ice cream

Summary: melt butter in a non-stick skillet, stir in brown sugar, liqueur and cinnamon.  Bring to boil, simmer 2 minutes, add bananas and cook 3-4 more minutes.  Remove from heat, add rum, and light with a long candle-lighter.  The fire burns blue.  When it goes out, the alcohol has burned off.  Serve warm over ice cream.

Single serving size:

  • 1  medium banana, sliced
  • 1 Tablespoon  butter
  • 1/4  cup  packed brown sugar
  • 1 Tablespoon crème de banane (banana liqueur)
  • 1/4  teaspoon  ground cinnamon
  • 1 Tablespoon  dark rum
  • served over 1 mini Blue Bell Homemade Vanilla ice cream cup
