Roasted Cabbage

  • 1 head fresh cabbage
  • 3-4 teaspoons olive oil
  • 2 teaspoons dried basil
  • 2 teaspoons lemon pepper

Cut the head of cabbage into eighths and then across into slices about 1-1/2 inches wide.  Toss the cabbage with the spices and oil in a large bowl  Coat thoroughly, and spread in a baking sheet lined with foil (for easy clean up).  Bake at 425°F for 20 minutes, stirring once half-way through.
