Wick Fowler’s Two Alarm Chili

True chili doesn’t contain any “fillers” like beans or rice.  However if you are vegetarian, you will actually create your chili with only fillers.  Try cooked Lima Beans, which can easily absorb the seasonings without changing the overall flavor of the chili.  Wick Fowler’s chili mix comes with a lot of small packages of seasonings and you want to use them all.  If your first batch is too spicy, next time try omitting half of the cayenne (red pepper) packet.  Two alarm chili is nicknamed after the number of fire alarm bells which used to be rung to announce the seriousness of a fire.  Three alarm bells was the worst, hottest blaze.  Two alarm chili is not spicy hot compared to some Indian and Thai dishes, but is definitely spicier than your typical TexMex food.

  • one package of Wick Fowler’s Two Alarm Chili mix
  • 2 pounds of lean ground beef or sirloin or ground turkey
  • 1 can tomato sauce (8 oz.) or two 4-oz cans tomato sauce

Follow the instructions on the package.  Summary: brown the meat and drain off any fat.  If you like fine-ground chili, use a food processor to break the chunks of meat into tiny pieces.  Add the meat back into the skillet along with the tomato sauce and most of the seasonings (the masa isn’t added until later). Cook on low or medium 15-20 minutes. Save the package of white masa (flour) for last.  Mix the masa with about 1/4 cup warm water, then add to the chili and simmer another 15-20 minutes.
