Pad Thai

Pad Thai with Chickenfor four people, get two boxes of A Taste of Thai’s Pad Thai for Two

This is NOT a quick meal, the noodles have to soak 20 minutes before you begin cooking.

Use a very deep non-stick skillet.  If you want to feed all four people at one time, you probably need two very deep skillets because there is not enough room in one skillet to stir-fry a double-batch.

  • 1 egg
  • 3-4 tablespoons canola or corn oil
  • 4 scallions (green onions)
  • 1/3 cup chopped dry roasted peanuts
  • optional: bean sprouts
  • optional: chicken
  • optional: garnish with cut limes
  • optional: garnish with chopped cilantro
  • optional: garnish with chopped peanuts

Follow the instructions on the back of the box.

Summary: remove noodles from package and soak them in the hottest water you can get (boil it in a pot or get it as hot as possible out of your sink) for about 15 minutes, then drain in a colander.  Cut up chicken into bite-size pieces and fry in 1/2 of the oil.  Remove chicken and fry up egg.  Add noodles and sauce contained in package.  Add vegetables and fry a little longer.  Garnish and serve the first box while you get the second box going.
