Texas Pad Thai

This fusion recipe includes ham and greens with a make-at-home Pad Thai. My go-to base is always the box of Pad Thai for Two by Taste of Thai.  The mix is sometimes difficult to find in local markets, but ordering online for delivery or curbside pickup usually does the trick. Sometimes, I just purchase a 6-pack through Amazon.

Ingredients:

  • 1 box Pad Thai for Two (will end up serving 4-6)
  • 6-10 oz. leftover ham, cut into strips
  • 1-2 bunches any kind of greens or kale
  • 1 bunch green onions
  • Limes, Cilantro, and crushed peanuts for garnish

Summary: Soak the noodles. Chop and sauté the greens in a non-stick skillet sprayed with Pam or in 1-2 teaspoons olive oil. Remove greens and set aside. Follow the rest of the directions on the package and add sliced ham after the eggs are scrambled. Add the sautéed greens after frying the noodles.
