Texas Caviar

(fancy Black-Eyed Peas to eat cold or warm)

  • 5 cups cooked black-eyed peas, drained
  • 3/4 cup vegetable oil (canola, corn, etc.)
  • 1/4 cup vinegar (preferably white wine but apple cider or regular vinegar will do)
  • 1-2 cloves garlic, minced
  • 1/4 cup thinly sliced purple onion or green onion tops cut into small circles
  • 1/2 teaspoon salt
  • 1/4 teaspoon cracked black pepper

Place all ingredients into a container with a tight fitting lid and shake vigorously to combine.  Store in refrigerator for 4 hours to blend flavors.  Serve chilled or warm with sturdy crackers.  Keeps up to 1 week in ‘fridge.
