Basil Beets

Basil & Balsamic Beets

  • 2 pounds fresh, whole beets
  • 1 Tablespoon olive oil
  • 2 Tablespoon chopped fresh basil
  • 2 Tablespoons balsamic vinegar.
  • 1 Tablespoon brown sugar
  • 1/4 teaspoon salt

In 13″ x 9″ roasting pan, toss 2 pounds whole beets with 1 Tablespoon olive oil.  Roast in 450 degree oven for 1 hour or til tender.  Cool beets, peel.  Dice beets; toss with 2 Tablespoons each chopped basil and balsamic vinegar.  Add brown sugar and salt.  Toss well.

Serve hot or cold.
