Jambalaya

  • 1 box Zatarain’s Jambalaya mix
  • 1-2 cups cooked chicken, beef, or sausage (can probably be made with really firm tofu, but I have never tried it)
  • 2 Tablespoons canola or corn oil
  • 3-quart saucepan with a lid
  • chopped green onions (about 1/4 cup)

Follow the instructions on the box. Garnish with chopped green onions.

Summary: put 2-1/2 cups water plus 2 Tablespoons of oil in a saucepan and cook on high until the liquid boils.  Add the package of Jambalaya mix (rice and spices), plus the cooked meat.  Stir well and bring back to boil.  Cover pot with lid, turn heat down to simmer (low) for 25 minutes.

Vegetarian: replace the meat with 2 cups of sauteed onions, celery, and bell peppers, cut into bite-sized pieces.

Serving extra guests?  Keep the meat in the recipe and add the  2 cups of sauteed vegetables to increase the number of people you can serve with one package.
