Sausage and Cheese Bisquick Bites

Preheat oven to 400°F.

  • 16 oz. shredded sharp cheddar cheese
  • 12 – 16 oz. Jimmy Dean Hot or regular bulk sausage roll
  • 2 cups Bisquick

Cover your hands with clean vinyl or latex gloves to get the best results from this recipe.

Using your hands (in the gloves), combine all ingredients in a bowl.  Really work the three ingredients to get them thoroughly mixed.  Still using the gloves, shape into balls  about the size of  a whole pecan or walnut (diameter is about the size of a U.S. quarter).

Place the biscuit bites on a cookie sheet (cover with foil first to speed your clean up time).  They won’t spread out so you can place them about 1/2-inch to 1-inch apart.

Bake only one cookie sheet of the balls at a time.  Cook for 15 minutes.  They may not turn dark brown, but their small size makes them cook quickly.  They will darken some as they cool.  Eat warm or at room temperature.  Keeps in refrigerator up to 1 week.

Makes 36-48 pieces.

To warm cold sausage bites: place 3 balls in microwave and heat on high 15 seconds.
