British Flapjacks

In the U.S., flapjacks mean pancakes, but in the U.K., they are more like chewy granola bars.  Enjoy with tea!

  • 1 stick (½ c) butter
  • ¼ c golden syrup
  • ½ c light brown sugar
  • 2⅓ c quick oats
  • pinch of salt


Preheat oven to 350°F. Butter an 8x8x2 in. glass baking dish.

Place butter, syrup, and sugar in a heavy pot over medium low heat. Stir until butter is melted and sugar has dissolved. Remove from heat and add salt & oats. Stir to thoroughly coat the oats. Spread mixture in an even layer in the baking dish. Bake for 25 minutes or until golden brown on top.

Cool on a wire rack for 5 minutes. Cut into 4 squares, then cut each square into 4 triangles. The mixture will still be very soft at this stage. Cool completely before removing from the pan. The flapjacks will harden as they cool.
