Broccoli Slaw

From my friend Kay’s kitchen, this is a guy-pleasing salad.

Salad Ingredients

  • 2 packages ramen noodles, chicken or oriental flavor
  • 3/4 stick (3/4 cup) butter
  • 1/4 cup almonds – sliced or slivers
  • 2 12-oz bags broccoli slaw (24 oz total)
  • 1/4 cup sesame seeds (buy bulk or this is expensive)

Dressing Ingredients

  • 1/2 cup vegetable oil
  • 1/4 cup brown sugar
  • 1/4 cup apple cider vinegar
  • 1 packet ramen noodle seasoning (use only 1 of the packets from the two bags)

Directions

Remove the squares of dry ramen noodles from their bags and place in a freezer-weight Ziploc gallon bag.  Crunch the noodles (inside the bag) down into salad-topping-size with a kitchen hammer or with hands.  Melt the butter in a heavy skillet over medium heat.  Stir in the noodle pieces and almonds and cook on medium until lightly browned.  Add sesame seeds to hot ingredients and stir to combine.  Remove the skillet from heat and pour the seeds, noodle pieces and almonds over paper towels to absorb excess butter.

Mix the salad dressing in a mini-food-chopper.

Pour broccoli slaw into a large bowl, toss with salad dressing.  Scatter noodles, almonds and seeds across top and toss lightly.  Serve immediately.
