Grasshopper Pie
(minty green frozen pie on a chocolate crust)

Chocolate Wafer Crust

  • 1-1/2 Cups fine crushed Oreos (about 25)
  • 6 Tablespoons melted oleo

Filling (light green when complete):

  • 6-1/2 Cups tiny marshmallows
  • 1/4 Cup milk
  • 1/4 Cup Crème de menthe liqueur
  • 2 Tablespoons Crème de Cacao liqueur
  • 2 Cups whipping cream (do not use Cool Whip)
  • Maraschino cherries for garnish
  • Hershey Bar, shaved for garnish

For crust, combine crushed cookies and oleo in a small mixing bowl. Toss to thoroughly coat cookie crumbs. Turn into 9-inch pie plate. Press into plate to form even crust. Chill about 1 hour prior to filling.

For filling, combine marshmallows and milk in a large saucepan. Cook over low heat, stirring constantly, until marshmallows are melted. Cool, stirring once every 5 minutes. Combine liqueurs and stir into marshmallow mixture. Whip cream until soft peaks form. Fold marshmallow mixture into whipped cream. Turn into chocolate wafer crust. Freeze overnight.  Garnish with dollops of whipped cream (optional), cherries, and chocolate curls.
