Garden Club Orange Salad

This is another salad my mother discovered through her Garden Club meetings. It was a tricky recipe because it the first time she was instructed to dump in dry Jell-O. Previously, all the salad recipes she’d made with Jell-O required water to be added to the dry powder and gelled. After my got it right, we loved it and kept asking for it on special occasions like Easter and Thanksgiving.

  • 1 small package (dry) orange Jell-O
  • 1 small container cottage cheese (do not drain)
  • 1 small (6 oz) container Cool Whip
  • 1 small can Mandarin Oranges (drained)
  • 6-8 Maraschino cherries, drained,  for garnish

Dump everything into a bowl and fold together gently with a spatula.  Do not whip or blend with an electric mixer.  Garnish with cherries that have been drained and dried on a paper towel, if desired.  Chill 4 hours or overnight.
