Fast Enchiladas

Fastest Ever Enchiladas

  • 1 Cooked Chicken
  • 2 Cups Grated Cheddar Cheese
  • 1 Cup Sour Cream
  • 1/2 Red Onion, Finely Chopped
  • 6 Flour Tortillas

Place the shredded chicken in a large bowl.  Add half the cheese, sour cream, and onion.  Mix well to combine.

Place the tortillas in a baking dish one at a time.  Spoon filling across center of each.  Roll them up to close and place seam side down.  Pour salsa over tortillas and cover with aluminum foil.  Bake about 40 min in 350 degree oven.

Remove foil and sprinkle with remaining cheese.  Return to oven until cheese is melted.

6 Servings – 1 enchilada each serving
