Potato Casserole

Baked Potato Casserole

  • 8 medium potatoes, cooked and chopped
  • 8 oz cheddar cheese, shredded
  • 1/4 c. chopped onion
  • 1/4 c. chopped celery
  • 8 oz bacon, cooked and crumbled
  • 1 c. mayonnaise
  • salt and pepper to taste
  • 1 cup Ritz crackers, crushed

Combine potatoes, cheese, onion, celery, bacon, mayonnaise, salt and pepper in bowl;  mix well.  Spoon into buttered 9×13 baking pan.  Sprinkle crushed Ritz crackers on top.  Bake at 350 degrees for 55 minutes.
