Broccoli Quiche

Chicken and Broccoli Quiche

 

  • 1 unbaked pie crust
  • 2 cups shredded cheese (cheddar, mozzarella, swiss, etc.)
  • 1-2 cups chopped cooked boned chicken (vegetarians, substitute other cooked vegetables, fresh sliced mushrooms, or pre-cooked and diced tofu – like Whole Foods prepared sweet chili tofu)
  • 4 eggs
  • 1-2 cups chopped, steamed broccoli
  • 2 cups milk
  • ½ teaspoon salt
  • ½ teaspoon pepper

 

Place chicken and broccoli in pie plate, which had been lined with unbaked crust. Arrange cheese over chicken and broccoli.  Mix remaining ingredients and pour over cheese, chicken and broccoli.  Bake quiche 15 minutes at 425° F, then lower oven temperature to 325° F and bake 30 minutes more.
