Fiesta Salad

Great as a side for tamales or enchiladas, or bulk up with taco-seasoned beef or chicken for a one-dish entree salad.

  • 16 oz package of salad mix
  • 15 oz can Ranch Style beans
  • 2 medium tomatoes, chopped into bite-size pieces
  • 1/2 cup grated cheddar or Mexican-blend cheese
  • 4 oz. tortilla chips, crushed
  • 4 oz. Kraft Catalina salad dressing
  • 8 oz. lean ground beef, browned, drained, and seasoned with 1/2 of a 1-oz. packet dry Lawry’s Taco seasoning (optional)

Heat Ranch-style beans and then drain off liquid.  Toss hot beans with cold salad, tomatoes, and Catalina salad dressing.  Scatter cheese over top, then toss with crushed tortilla chips.  Best eaten within 30 minutes, will not keep overnight (chips become soggy).  Optional, add browned, seasoned beef along with the beans.
