Weight Watchers Oriental Green Beans

  • 1 ½ pounds green beans, trimmed
  • 6 garlic cloves, minced

Sauce

  • 3 tablespoons soy sauce
  • 1 tablespoon oriental sesame oil
  • 1 teaspoon granulated sugar

In a large pot of rapidly boiling water, cook green beans until tender, about 4-5 minutes.  While beans are cooking, mix sauce in a small bowl and chop garlic in food processor.  Drain beans in colander.  Spray large Teflon frying pan with Pam and heat pan on high.  Add garlic and stir while cooking on high about 2 minutes.  Add green beans and toss in hot skillet with garlic until combined.  Add sauce and continue to stir and turn until most of the liquid is absorbed, about 1-2 minutes…

Other Stir-fry vegetable combinations to use with sauce

Squash and Orzo

  • 2 zucchini, sliced 1/8 – 1/4” thick
  • 2 yellow squash, sliced 1/8 – 1/4” thick
  • 2 cups cooked orzo pasta
  • 6 garlic cloves

Instead of boiling squash, just stir fry in the pan after garlic is toasted, then add the sauce and cook 3 more minutes.

Green Beans, Peas and Mushrooms

  • 1 ½ pounds green beans
  • 1-2 cups sugar snap peas
  • 1 cup sliced mushrooms
  • 6 garlic cloves

Follow basic recipe for green beans.  Add sugar snap peas and mushrooms, which cook quickly, with the partially cooked green beans just after garlic is toasted.
