Green Salad

It was my job to “make the salad” for Sunday lunches and I didn’t much think about a recipe.  This plain salad will serve 4 people.  We usually put two kinds of salad dressing on the table (1000 Island for my dad and brother and something else for my mom and me), and each person put their own dressing on the salad on their plate.  This recipe has an optional lemon juice dressing.

  • 1/2 head iceberg lettuce or 8 oz. packaged salad greens
  • 1 medium tomato
  • 1/4 cup thinly sliced fresh carrots or celery
  • 1/4 teaspoon garlic salt
  • dash of pepper
  • Optional: juice from 1 lemon (about 2 Tablespoons)
  • Optional: 1/2 cup croutons

Tear the lettuce into bite sized pieces and place in a bowl.  Cut the tomato into bite-sized pieced and add to lettuce with carrots or celery.  Toss salad with serving forks and add spices and lemon juice.  Toss again.  Just before serving, top with croutons.
