Roasted Cauliflower

 

  • 2 Heads Cauliflower
  • 1/2 Cups White Wine
  • 1/2 Cups Chicken Broth
  • 1 Tablespoon Olive Oil
  • 1 Teaspoon Oregano
  •  Salt & Pepper
  • 6 Cloves Garlic
  • 1/2 Cups Dry Bread Crumbs
  • 2 Tablespoon Chopped Parsley
  • 1 Cups Shredded Parmesan Cheese

1.  Preheat oven to 400 degrees

break apart the cauliflower into large pieces and cut off the thick stems.  Set the cauliflower pieces stem side down in a baking dish.  POUR WINE AND BROTH INTO DISH AND DRIZZLE OLIVE OIL OVER CAULIFLOWER.  Sprinkle with the oregano, salt and pepper.  Scatter the garlic over everything.  Cover and bake til tender, 30 to 45 min.

3.  Meanwhile, stir the bread crumbs, parsley and 1 tbsp olive oil in small dish.  When the cauliflower is tender, sprinkle the bread crumbs and the cheese over the florets and return to oven uncovered til topping is browned.  About 15 min.
