Coconut Lime Rice

The best rice side dish I’ve ever eaten is Katya’s recipe: https://www.littlebroken.com/cilantro-lime-coconut-rice/. It works with Tandoori Chicken, Tikka Masala, and Greek Chicken, and it is delicious on its own. I only buy two kinds of rice (boil-in-bag and Basmati) so my version has a slightly different texture. Plus, it is prepared in rice cooker.

  • 1-1/3 Cups Basmati rice
  • 1-1/3 Cups coconut milk
  • 1/2-1 cup water
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 lime (zest and juice)
  • optional: 1/4 Cup fresh cilantro leaves, chopped

Place Basmati rice in a wire mesh colander and rinse under running water. Move colander to a large bowl and add water until the rice in the colander is submerged. Soak 15 minutes then drain water and rinse again under running water. If rinse water is still cloudy, repeat the 15 minute soak and rinse again.

Move rinsed rice to rice cooker and add coconut milk, salt and pepper. Add enough water to bring the level to “2” then cover and start the cooker.

When the cooker has finished its cycle, add the lime zest and juice to the cooked rice. If you enjoy the taste of cilantro, add most of it with the lime juice.

Spoon the flavored rice into a serving bowl and scatter the remaining cilantro across the top of the rice.
