Bev Wright’s Strawberry and Romaine Salad

Strawberry Romaine Salad

This recipe was served by one of my best friends when we lived in California.  She said it was a Weight Watchers’ recipe, but I have never found it in their materials.

Poppy seed Dressing

  • 3 tablespoons sugar
  • 3 tablespoons light mayonnaise
  • 2 tablespoons fat-free milk
  • 1 tablespoon poppy seeds
  • 1 tablespoon white wine vinegar

Salad base

  • 10-ounce bag chopped romaine lettuce
  • 1 cup sliced strawberries
  • 2 tablespoons toasted, slivered almonds

Combine dressing ingredients in small food processor or stir in small bowl with fork or whisk.

Divide lettuce onto serving plates. Arrange strawberries on top and then sprinkle almonds over each individual salad. Drizzle dressing over salad or serve on the side.

6 servings of 1 ½ cups each.  73 calories each serving including 3 grams fat, 2 grams fiber. If you are counting Weight Watcher points, this is 1 point per serving.

Other salad combinations our family loves with this dressing

  • 10-ounces iceberg lettuce, 1 cup sliced peaches, 2 tablespoons toasted walnut halves
  • 10-ounce bag mixed lettuces, 1 cup sliced apples, 2 tablespoons toasted pecans
  • 10-ounce bag romaine, 15-ounce can drained mandarin oranges, 2 tablespoons toasted pine nuts
