Microwave Squash

  • 4-5 pieces of firm yellow squash or zucchini
  • 1/2 teaspoon salt
  • 1/4 teaspoon pepper
  • 1/4 cup water
  • 1-2 teaspoons butter

Wash the squash or zucchini and slice into 1/4-inch thick pieces.  Place in a microwave safe bowl and sprinkle with the salt and pepper.  Pour water over the squash and seasoning and cover with lid or plastic wrap.  Microwave on high 4-5 minutes (1 minute per whole squash: 4 squash = 4 minutes, 5 squash = 5 minutes).  Add butter and stir to melt.  Serves 4 people.
