Of all the creative uses of leftover turkey, this is one of my favorite recipes: Turkey Enchiladas with Green Sauce and Fresh Cranberry Salsa.  I have never made it, only enjoyed it after a ranch neighbor prepared it for our family one Christmas.  This recipe is not for beginners or cooks who are pressed for time.  On the other hand, it freezes well; put your guests to work preparing it after Thanksgiving, and freeze until your next big winter holiday meal.
