This year, my O-Week group includes a student who is lactose intolerant and requires gluten free foods. Our O-Week dinner was a snap, thanks to Tejano Salsa’s Tamales. If you call in advance, they can make all their tamales gluten-free. But how to incorporate no-dairy and no-wheat into our monthly lunches? Fortunately, this old recipe from my mom lends itself to gluten free with a few minor adjustments and the frosting was already gluten free and dairy free. Enjoy this new recipe!
