So the Wheatless Strawberry Cake was definitely eaten in yesterday’s O-Week lunch, but the bigger hit by far was Russian Cream with Raspberries. Until you’ve taken a bite out of this elegant no-bake dessert, it is difficult to appreciate. The main ingredients in the cream are whipping cream, sour cream, and sugar. Unflavored gelatin gently helps it retain its shape when sliced, but for vegetarians the gelatin can be left out and the cream scooped up in great soft clouds that will cradle the raspberries. Good thing I made three batches, it is in high demand!
