We made King Cakes during the Cajun Kitchen, to go along with our red beans and rice, home made yeast rolls, and sweet tea. Many thanks to Christian Hauser for bringing the fabulous boudin!
Now you know a King Cake isn’t exactly a cake. It’s more like a huge, yeast bread cinnamon roll with a vanilla, butter and brown sugar filling inside, and a glaze on top, dusted with colored sugars in the green, gold and purple colors of Mardi Gras. Because of the yeast bread base, which has to rise three different times, it takes six (6) hours to make a King Cake. Yes, we bake a pink plastic baby inside. I usually have one on display so you know what to look for. If you get the baby, you get a year of good luck and have to bring the next King Cake.
