Moo Shu Lettuce Wraps

Two weeks of stress eating, plus Easter leftovers resulted in an extra 5 pounds that did my Zumba(R) clothes absolutely no good!  When it’s time to return to healthy eating, my favorite kick-starter is Moo Shu Lettuce Wraps.  Very filling, very easy  – just cut veggies into big chunks to saute and then dice in a food processer after cooking!  Lettuce wraps are yummy, but messy to eat at work, so I use the Moo Shu filling on top of sweet butter lettuce and add Won Ton strips for a hearty salad.  Yum!
