Roselle pods were part of my Farm Share in this week’s Plant it Forward bundle. Rather than making syrup, jam or tea, I decided to chop the petals up for Easy Roselle and Rosemary Scones. An authentic English or Scottish scone would include freshly whipped cream in the dough; the presence of a baking mix like Bisquik would definitely not be appropriate. Here, in frantic-paced Houston households with multiple drivers, schedules and deadlines, easy is best. Caution: it does take time to remove the Roselle “petals” from around the seedpod, but mixing, shaping and baking the scones is easy. The glaze is a snap. If you are in a real rush, use a butter knife to spread the glaze in a thin layer over the baked scones rather than drizzling.
