Leftovers are usually not my favorite meal. But, after eating on this Carib-Indian Okra several times, I kept craving it week after week. My husband burned out on the taste, so I ended up with leftovers. And Voilà! the leftovers turned a regular, cheap packet of Ramen into one of my favorite meals ever. The coconut milk made the ramen broth creamy and the spices, greens, tomatoes and and crispy okra were wonderful with the noodles.
