Light Cashew Chicken with Spinach

I can only manage to eat a raw oyster about once every three to five years, so it is surprising that this recipe doesn’t work for me when I omit the oyster sauce ingredient. Trust me, you won’t notice any ‘fishy’ flavor in the final dish. Serve over rice or Lemongrass Grits.
