Week 16 recipes feature a mini-tour the Gulf Coast between New Orleans and Corpus Christi. These dishes probably have origins in Spanish, French, and Caribbean cooking, but they have also been influenced by the 19th- and 20th-century flow of immigration through Galveston, Texas. However, our Gulf Coast cities and towns have also experienced growth in their Asian populations, so this week also includes a curry, veggie stir-fry and rice stick dish as well.
- Jambalaya – serve with crusty French bread and a sweet green salad mix like Fresh Express Pear Gorgonzola
- Veggie Stir-Fry – serve with steamed brown rice
- Chicken Curry (Vegetarians, substitute fish Gumbo) – serve with steamed white rice and green salad
- Vietnamese Beef with Rice Stick (Vegetarians, cook up a pot of Pinto Beans instead and eat with soft tortillas and Fresh Express Salsa Ensalada)
- Shrimp Ettoufe – serve over steamed brown or white rice and serve with cabbage slaw
