I took a second look at the Rice Farmers Market today, circulating around to various vendors with Skye, a student from McMurtry College. I was pleasantly surprised at the strong showing of vendors selling produce, eggs, cheese and meat, and even flowers! When the location first transitioned to Rice, it felt like there were as many people selling services as consumable food. So, if you have a chance to buy fresh vegetables, here are recipes that show off their flavors.
- Vegetable soup
- Greens (2 bunches of fresh greens = 1 package Glory mustard/collard greens)
- Turnips (cook and eat with butter, salt and pepper, or use in curry, soup, etc.)
- Cabbage
- Green beans
- Baked potatoes & baked sweet potatoes
