In my Plant it Forward farm share this week, I received lots of greens, plus okra, turnips, radishes and arugula (see three new recipes for the peppery arugula leaves.) but I was too busy to actually cook for several days. Those days were filled with rain. You know, when the forerunners of the Canadian front collided with the last remnants of a departing high that had lasted over a week, to be joined by offspring storms of Hurricane Patricia after she dissipated in Mexico’s mountains. So when the cold front settled in on Sunday, I looked at all the farm share vegetables in my refrigerator and thought, “Gumbo!” This Vegan Gumbo is one of the best gumbo recipes I’ve prepared and I highly recommend it. BUT, it takes a lot of chopping. Invite 4-5 friends over to help you prepare it, serve them hot coffee or iced tea and catch up as you slice and dice. For your meat-loving friends, put a bowl of fried bacon bits on the side, it makes a delicious garnish!
