Arugula Three Ways

IMG_2571The peppery arugula from my weekly Plant it Forward farm share has been a fun ingredient to prepare. One of the fun surprises at my farmer’s stall is a “trade” container.  I always peek inside to see what other people leave and this week, I traded my one of my bunches of root vegetables for a second bag of arugula. Since I had so much to work with, I prepared it three ways.  What I liked best is that you can prepare the pan-fried arugula as a side dish and even get kids to eat 1/4 cup, then use the leftovers in the omelette later in the week.  Because you are pan frying or using finely chopped arugula, you don’t have to prepare it the day you get the arugula.  Mine was prepared three-four days after I got the arugula.
