There are always at least one or two different types of greens in my Plant it Forward share each week, and I didn’t have a chance to use the fresh greens before a short trip out of town. When I returned four days later, it was time to take advantage of my full refrigerator bins and I cooked up four different dishes over two days. Luckily, most will freeze well!
- Get your Veggies Meatloaf (Secret Sauce makes it kid friendly)
- Falafel with spicy mustard greens instead of arugula (I shaped the patties into appetizer sizes and froze for holiday parties)
- Tortellini Soup
- Thai Cabbage Soup
