Russian Cream and Raspberries

cropped-RussianCreamRaspberries-full.jpgThis elegant dessert recipe came from the Prudential Life Insurance Company.  Prudential set up the first supercomputer of the 1950’s in Houston and sent down a management team from their New York office to train the local staff – like my mom – to manage the data entry (via keypunch), run reports, and in general “use the computer.” The newly constructed office building incorporated imported Italian marble and wood and stone treatments from around the world (Mom was also a tour guide). New York chefs were also sent to Houston to set up the employee cafeteria – perhaps to ensure their management team received the type of meals to which they were accustomed.  The chefs were happy to share their recipes with the staff and this was one of my mom’s favorites. Russian Cream with Raspberries deserves to be served on your fanciest dishes, but it tastes just as good on a paper plate.
