My kids and my O-Week group love these mini strawberry icebox pies.  To make sure I had enough to share with my co-workers, I made a double recipe of crust and filling and produced about 30 individual servings.  The crust and filling is very light and you can use as little or as much home-made whipped cream on top as you like.
