Taste the Caribbean with Tropical Veggie Stirfry

completed Tropical Veggie StirfryIf you’re longing for a taste of the Caribbean, try this lovely summer vegetable stir fry. It can accommodate almost  any fresh veggie you can shred in a food processor. The first time I tried it, I had a combination of store-bought veggies and selections from two different gardens (ours and a friend’s). My combination included  butternut and zucchini squash, eggplant, asparagus, and bell peppers. It is ideal for those squash-style veggies you are discovering in your Plant it Forward farm share this summer but don’t know how to use.  Well, maybe not the radishes…

Ingredients for Tropical Veggie Stirfry
After shredding the eggplant, zucchini, butternut squash, and asparagus, I didn’t have room in my pan for the packages of frozen green peas and cabbage slaw. I’m turning those into a hearty fried rice dish instead!
