Last week, we gave vegetarians the option of a pot of pinto beans as an alternative for Vietnamese beef. This week, Beans and Bacon is featured for carnivores, but there is also a vegetarian version. This recipe is both sweeter and heartier than last week’s pot of pinto beans. The good news is that most of these recipes are either vegetarian, or require very little meat. Even when I included one pound of large, cleaned shrimp and one small container of crab claw meat for the gumbo, the total grocery bill for this week in late October 2011 was $178.04.
- Red Yam Curry and Basmati Rice
- Wava Fick’s Pinto Beans and Bacon (included vegetarian version) – serve with store-bought jalapeno cornbread and a green salad
- Gumbo (chicken or seafood) – serve with leftover Basmati Rice
- Cashew Chicken – serve with steamed white or brown rice and chilled fruit like strawberries or grapes
- Mexican Salad – one dish meal including beans and cheese for protein, makes a LOT
- Dessert option: Sweet Seminola
