Chicken with Broccoli in Garlic Sauce
Weight Watchers publishes a lot of recipes out of their test kitchens; their goal is to provide delicious and filling meals that are easy to prepare so that their members won’t feel like they are on a diet. This recipe turns out a fabulous stir-fry that tastes like it came from a restaurant.

Ingredients for your shopping list:
- 4 teaspoons olive oil
- 2 teaspoons minced garlic
- 1 lb. chicken breast or chicken tenders, cut into 1-inch chunks
- 1 teaspoon dried thyme
- 4 cups fresh or frozen broccoli florets
- 1/2 cup chicken broth
- 4 cups cooked rice (2 cups dry rice or 2 Minute Brand boil-in-bag packets of Rice)
Summary:
Heat oil in large non-stick skillet, saute garlic, season chicken with seasonings (thyme, salt, pepper) and add to skillet. Stir-fry 3 minutes, add broccoli, cook 1 minute more. Add broth, cover, simmer 5 minutes, serve over rice.
