Texas Caviar
(fancy Black-Eyed Peas to eat cold or warm)
- 5 cups cooked black-eyed peas, drained
- 3/4 cup vegetable oil (canola, corn, etc.)
- 1/4 cup vinegar (preferably white wine but apple cider or regular vinegar will do)
- 1-2 cloves garlic, minced
- 1/4 cup thinly sliced purple onion or green onion tops cut into small circles
- 1/2 teaspoon salt
- 1/4 teaspoon cracked black pepper
Place all ingredients into a container with a tight fitting lid and shake vigorously to combine. Store in refrigerator for 4 hours to blend flavors. Serve chilled or warm with sturdy crackers. Keeps up to 1 week in ‘fridge.
