Sesame Chicken and Bok Choy Stir-Fry

If you happen to look at the picture, what appear to be pad Thai-style noodles are actually thin strips of onion.
Ingredients for your shopping list:
- 12 oz chicken breast, boneless, skinless, cut crosswise into 1/2-inch to 3/4-inch strips
- 2 Tbsp cornstarch
- 2 tsp canola oil, divided
- 1 tsp dark sesame oil, divided
- 1 small onion(s), cut into thin strips
- 1 Tbsp ginger root, fresh, grated
- 1 Tbsp minced garlic
- 5 cup(s) bok choy, sliced crosswise 1/4-inch to 1/2-inch thick
- 2 Tbsp water
- 2 Tbsp low-sodium soy sauce
Summary: Lightly coat chicken with cornstarch in a medium bowl. Leave in bowl while you prepare skillet. Heat a large non-stick skillet over medium high heat (7 on a scale of 1-9) for 45 seconds. Add 1 teaspoon of the canola oil and stir-fry the chicken 4 minutes. Remove to a paper-towel lined plate. Heat remaining teaspoon of canola oil and stir fry onion 4 minutes. Add ginger and garlic and cook 20 seconds. Add bok choy and water, stir-fry over medium high heat 4 minutes. Return chicken to skillet, pour in soy sauce and cook 2 minutes. Sprinke with remaining 1/2 teaspoon sesame oil, then toss to coat and serve with cooked rice.
