Raspberry Trifle

This is a very light, sugar-free and fat-free dessert that is SUPER easy to make and requires no baking or mixing.  Shhh! No one will know it is sugar-free and fat-free if you don’t tell them.

  • 1 sugar-free Angel Food Cake (Kroger and HEB both carry this item), torn into bite-size pieces
  • 2 individual serving size containers of Weight Watcher’s Amaretto Cheesecake flavored yogurt
  • 1 box fresh strawberries
  • 2 boxes fresh raspberries or 6-12 oz. frozen raspberries
  • 2 8-oz. containers Fat Free Cool Whip
  • 1 10-12 oz. jar sugar-free raspberry or blackberry jam, liquidized in a bowl in microwave (20-30 seconds)
  • 1/4 cup almond slivers, toasted

Find a large glass bowl for the trifle.  It is a very pretty dessert and guests should see all the layers.

Layer the dessert in this order:

  1. bottom layer: 1/2 of the Angel Food cake pieces
  2. next layer:   1/2 of the jam, drizzled over the cake pieces
  3. next layer: one of the containers of yogurt, spread over the jam-drizzled cake pieces
  4. next layer: 1/2 of the raspberries
  5. next layer: 1/2 of the strawberries
  6. next layer: one of the continers of Cool Whip, spread in an even layer.

Repeat the same layers, ending with the second container of Cool Whip.  Sprinkle the toasted almonds over the top, cover with plastic wrap and chill until serving.  Serve within 24 hours of making.
