Once you begin making your own curry paste, whipping up a simple curry is fast and easy.
- 1/3 Cup Texas Thai Yellow Curry Paste
- 1 can (10-16 oz) coconut milk
- 1 baked Russet potato
- 1 baked sweet potato
Mix ingredients in a pot. Bring to a boil then turn off heat and serve over rice or grits. (Potatoes can be baked ahead of time for 60 minutes at 400° F.)
