- 1/2 Cup Flour
- 1 Tsp Salt
- 3/4 Tsp Seasoned Pepper
- 4 Thick Pork Chops
- 1 Tablespoon Olive Oil
- 3 – 4 Cloves Garlic – Minced
- 1/3 Cups Balsamic Vinegar
- 1/3 Cups Chicken Broth
- 3 Plum Tomatoes – Seeded And Diced
- 2 Tablespoon Drained Capers (Optional)
1. Combine first 3 ingredients in shallow dish, dredge pork chops in flour mixture.
2. Cook pork in hot oil in a large nonstick skillet over med hi heat 1 – 2 min on each side or til golden brown. Remove pork from skillet.
3. Add garlic to skillet and sauté 1 min. Add vinegar and broth, stirring to loosen particles from skillet; stir in tomatoes and capers.
4. Return pork to skillet; bring sauce to boil; cover, reduce heat and simmer for 4-5 min. or til pork is tender. Serve pork with tomato mixture.
